Difficulty: Easy
For this delicious recipe, you want to be using an 8 1/2 x 4 1/2 inch loaf pan. Feel free to add or omit the lemon, apricots, or nut meat.
Preheat oven to 350 degrees.
Sift before measuring:
1 3/4 cups all-purpose flour
Resift with:
2 1/4 teaspoons double acting baking powder
1/2 teaspoon salt
Blend until creamy:
1/3 cup of shortening
2/3 cup of sugar
3/4 teaspoons grated lemon rind
Beat in:
1 to 2 beaten eggs
1-1 1/4 cups ripe banana pulp
Directions:
Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth. Fold in:
1/2 cup of broken nut meats
1/4 cup of finely chopped apricots
Place the batter in a greased bread pan. Bake the bread for ~1 hour, or until done.
Cool before slicing.
